At Hachidori Sake, the hummingbird—”hachidori” in Japanese—is more than our namesake. It is our symbol for what many believe cannot be done. In nature, this small bird defies logic, moving with precision and strength far beyond its size. In the craft of Japanese Sake, it reminds us that with intention, patience, and skill, the impossible can become reality.

No one embodies that truth more than our Sake Master, Stuart Morris. An unassuming, hard-working Bostonian, Stuart has dedicated 25 years to mastering Japanese Sake—a pursuit that many told him was out of reach for a non-Japanese. He began behind the bar of a sushi restaurant in the U.S. Virgin Islands, where his curiosity for Sake took root. That spark carried him to San Francisco and Napa Valley, where he immersed himself in the finest Sakes and dining traditions, making countless pilgrimages to Japan to study its culture, rice varieties, and brewing techniques.

In 2010, Stuart sat for the prestigious Kikisake-Shi Sake sommelier exam in Tokyo. The test was entirely in Japanese. Outsiders were told they could never pass. Stuart did.

But earning the title was only the beginning. Determined to learn the art from within Japan’s brewery walls, he knocked on doors, slept on floors, and cleaned breweries for three relentless years before earning an apprenticeship under Master Brewer Masanobu Shindo at the historic Shindo Brewery in Yamagata. There, among the pristine waters, fertile rice fields, and crisp mountain air, Stuart honed his skills—earning the rare honor to craft Sake side-by-side with his mentor.

This is where the spirit of the hachidori lives most vividly in our process. Every choice is deliberate yet unforced, guided by Stuart’s belief that Sake should feel effortless but layered, elegant yet intense. The result is Hachidori–three bottlings of impossibly-delicious Japanese Sakes: Junmai, Junmai Ginjo, and Daiginjo. They are a marriage of restraint and depth that lingers long after the last sip.
