Together, Stuart and Masanobu-san bring decades of accumulated knowledge and meticulous attention to detail to every stage of production.
The brewery is purposefully located near the pristine mountain waters of Yamagata, which are soft on the palate and perfectly balanced in minerals—giving Hachidori Sakes their signature crisp finish. Winter’s chill slows fermentation, allowing the moromi to develop with subtlety and depth.
